  • 8 oz (225 g) spaghetti or ramen noodles (can substitute with rice noodles for gluten-free)
  • Β½ cup (130 g) creamy peanut butter
  • 3 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • Β½ teaspoon grated fresh ginger (optional)
  • Β½ cup (120 ml) warm water
  • 2 green onions, thinly sliced
  • 2 tablespoons crushed roasted peanuts
  • Optional: red pepper flakes or Sriracha for heat
  • Optional: fresh cilantro for brightness

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz (225 g) of your chosen noodles and cook according to package instructions, usually 7 to 9 minutes for spaghetti. Stir occasionally to prevent sticking.
  2. Once noodles are al dente, drain in a colander and rinse briefly under cold water to stop cooking and remove excess starch. Set aside.
  3. In a medium mixing bowl, combine Β½ cup (130 g) creamy peanut butter, 3 tablespoons soy sauce, 1 tablespoon toasted sesame oil, 1 tablespoon honey, 1 teaspoon rice vinegar, minced garlic, and grated ginger (if using).
  4. Slowly add Β½ cup (120 ml) warm water while whisking the sauce to your desired consistency. It should be smooth and creamy but pourable. If the sauce feels too thick, add a tablespoon more water at a time.
  5. Taste and adjust the sauce by adding more honey for sweetness or more soy sauce for saltiness. Stir in red pepper flakes or Sriracha if you want heat.
  6. Add the drained noodles directly to the bowl with the peanut sauce. Toss everything together until noodles are evenly coated.
  7. Plate the noodles and sprinkle with sliced green onions, crushed roasted peanuts, and fresh cilantro if desired. Serve immediately.

Notes

Do not skip rinsing the noodles to stop cooking and help the sauce cling better. Add warm water gradually to achieve a smooth sauce consistency. Toast peanuts for extra flavor and crunch. Adjust sauce thickness and seasoning to taste. For vegan version, substitute honey with maple syrup and soy sauce with tamari. Protein or veggies can be added by sautΓ©ing and tossing in at the end.
