Quick and delicious brownie bars made from a box mix, enhanced with bourbon and toasted pecans for a rich, nutty flavor and a grown-up twist.

  • 1 brownie box mix (recommend Ghirardelli)
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil (80 ml)
  • 1/4 cup water (60 ml)
  • 2 tablespoons bourbon (30 ml)
  • 1 cup pecans, chopped and toasted
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Toast pecans by spreading 1 cup chopped pecans on a baking sheet and baking for 6-8 minutes until fragrant and golden, stirring halfway through. Set aside to cool.
  3. In a medium bowl, combine brownie mix, eggs, vegetable oil, and water. Stir gently until just combined.
  4. Stir in bourbon and vanilla extract if using.
  5. Fold in toasted pecans, reserving a small handful for topping.
  6. Pour batter into prepared pan and spread evenly. Sprinkle reserved pecans on top.
  7. Bake for 28-32 minutes, checking at 28 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter.
  8. Cool completely in the pan on a wire rack for at least 30 minutes.
  9. Slice into bars or squares and serve.

Notes

Do not skip toasting pecans to enhance flavor and crunch. Measure bourbon carefully to avoid runny batter. Mix gently to prevent tough brownies. Use room temperature eggs for better batter consistency. Check oven early to avoid drying out. For less fudgy bars, reduce oil by 1 tablespoon; for gooier bars, add more bourbon or an extra egg yolk.
