  • 1 cup (240ml) heavy whipping cream, chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the strawberries: In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Stir gently to coat and let sit for at least 30 minutes.
  2. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Add the cubed cold butter and cut it into the flour mixture using a pastry cutter or two forks until it resembles coarse crumbs with some pea-sized bits.
  5. Whisk the milk and beaten egg together, then pour into the flour mixture. Stir gently just until combined; do not overmix.
  6. Turn the dough onto a lightly floured surface and pat into a 1-inch thick rectangle. Cut out rounds using a biscuit cutter or glass and place on the baking sheet. Gather scraps and repeat.
  7. Bake biscuits for 12–15 minutes until golden and risen.
  8. While biscuits bake, whip the chilled heavy cream with powdered sugar and vanilla extract until soft peaks form.
