A quick and easy side dish featuring caramelized, crispy cabbage steaks drizzled with rich garlic butter, perfect for any occasion.

  • 1 medium head green cabbage, sliced into 3/4-inch thick steaks
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened (or dairy-free margarine for vegan option)
  • 4 cloves garlic, minced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. Remove any wilted outer leaves from the cabbage, then slice into 3/4-inch thick steaks (about 6-7 steaks from a medium head).
  3. In a small bowl, combine softened butter, minced garlic, salt, pepper, and smoked paprika if using. Stir well.
  4. Place the cabbage steaks on a parchment-lined baking sheet. Brush both sides generously with olive oil.
  5. Spread a thin layer of garlic butter on top of each steak, reserving some for after roasting.
  6. Roast in the oven for about 20 minutes. Halfway through, flip each steak gently and brush the other side with olive oil and more garlic butter.
  7. After roasting, remove from oven and immediately brush with remaining garlic butter.
  8. Sprinkle chopped fresh parsley on top and serve warm.

Notes

Do not overcrowd the pan to ensure crispiness. Use a sharp knife to slice cabbage evenly. Flip gently halfway through roasting. Watch closely in the last 5 minutes to avoid burning. For vegan option, substitute butter with vegan butter or coconut oil. Reheat leftovers in oven at 375Β°F for 8-10 minutes to maintain crispiness; avoid microwave.
