A creamy, perfectly balanced deviled eggs recipe that’s quick, easy, and budget-friendly—ideal for Easter gatherings and beyond.

Ingredients

Scale
  • 12 large eggs
  • ½ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • ½ teaspoon granulated sugar
  • Salt to taste
  • Freshly ground black pepper to taste
  • Smoked paprika for garnish (optional)

Instructions

  1. Place 12 large eggs in a single layer in a large pot. Cover with cold water by about 1 inch. Bring to a rolling boil over medium-high heat, then cover, turn off the heat, and let sit for 12 minutes.
  2. Transfer the eggs immediately to a bowl of ice water. Let chill for at least 10 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on the counter, then roll lightly to crack the shell all over. Peel under running water if needed. Pat dry with a paper towel.
  4. Slice each egg in half lengthwise. Carefully scoop out yolks into a mixing bowl. Arrange whites on a serving platter.
  5. Mash yolks with a fork until crumbly. Add mayonnaise, sour cream, Dijon mustard, white vinegar, and sugar. Mix until smooth and creamy. Season with salt and pepper to taste. Add a teaspoon of water or more sour cream if mixture is too thick.
  6. Using a spoon or piping bag, fill each egg white half with the creamy yolk mixture, mounding slightly.
  7. Sprinkle smoked paprika lightly over the deviled eggs for color and smoky flavor.
  8. Refrigerate for at least 30 minutes before serving to let flavors meld and filling set.

Notes

Use older eggs or add a teaspoon of baking soda to boiling water to make peeling easier. Chill eggs well before serving to keep filling firm. Add garnish like paprika or herbs just before serving. Can prepare a day ahead and refrigerate. Avoid freezing deviled eggs as it affects texture.
