Instructions

  1. Gather your ingredients: eggs, cottage cheese, butter, milk, salt, and pepper.
  2. Crack 4 large eggs into a mixing bowl. Add 2 tablespoons (30 ml) of milk or cream. Whisk vigorously until uniform and slightly frothy.
  3. Add ½ cup (120g) of small-curd cottage cheese to the eggs. Gently fold it in with a spatula or spoon, keeping the curds intact.
  4. Heat a non-stick skillet over medium-low heat and melt 1 tablespoon (14g) of unsalted butter until it foams but does not brown.
  5. Pour the egg and cottage cheese mixture into the skillet. Let it sit undisturbed for about 10 seconds until edges start to set.
  6. Slowly push the eggs from the edges toward the center every 15-20 seconds, allowing curds to form. Cook low and slow to avoid dryness.
  7. When eggs are mostly set but still slightly runny on top (after about 3-4 minutes), season with salt and pepper. Add chopped fresh herbs if using.
  8. Remove from heat and let residual heat finish cooking the eggs to keep them silky.
