A rustic and creamy white bean Tuscan soup with kale and Parmesan, perfect for cozy nights and quick weeknight dinners. This nourishing soup combines simple pantry staples with fresh ingredients for a comforting meal.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 large garlic cloves, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups low sodium vegetable broth
  • About 4 cups fresh kale, packed and roughly chopped
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • 1 large bay leaf
  • Salt and black pepper to taste
  • ½ cup freshly grated Parmesan cheese (about 50 g), plus extra for serving
  • Optional: 1 teaspoon fresh lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once shimmering, add the diced onion, carrots, and celery. Cook for about 7-8 minutes, stirring occasionally, until the vegetables soften and the onion turns translucent.
  2. Add the minced garlic and fresh thyme. Stir for 1-2 minutes until fragrant, being careful not to let the garlic burn.
  3. Pour in the vegetable broth and add the drained cannellini beans along with the bay leaf. Bring everything to a boil, then reduce to a simmer.
  4. Simmer uncovered for 20 minutes, allowing the flavors to meld and the broth to reduce slightly.
  5. Remove the bay leaf and use a potato masher or immersion blender to gently mash about one-third of the beans in the soup to give the broth a creamy body.
  6. Stir in the chopped kale and cook for another 5 minutes until wilted but still vibrant green.
  7. Season with salt and freshly ground black pepper to taste. Add a splash of fresh lemon juice if desired.
  8. Turn off the heat and stir in the grated Parmesan, allowing it to melt slightly into the warm soup.
  9. Ladle into bowls and garnish with extra Parmesan and a drizzle of olive oil if desired.

Notes

Keep an eye on the soup while it simmers; add more broth or water if it becomes too thick. Mash only about one-third of the beans to maintain texture. Add kale near the end to keep it vibrant and tender. Use fresh Parmesan for best flavor. For vegan version, omit Parmesan and use nutritional yeast.
